Curd Making

Curd is one of Sri Lanka’s most authentic and popular desserts. Particularly famous in our rural southern region of Sri Lanka, curd making is usually a profession passed on from generation to generation. We produce our own in-house curd and in this experience, our chef will demonstrate the simple yet painstaking process of transforming freshly sourced buffalo milk into this deliciously creamy treat – often eaten for breakfast or after a meal. Steps include straining the milk and boiling it over an open hearth to reduce the water content by 20 percent before leaving it to rest in traditional clay pots.
